Green salad
Spain's everyday salad: lettuce, tomato and onion dressed with olive oil, vinegar and salt. It goes with almost anything; olives, grated carrot or lamb's lettuce are common additions.

Ingredients for 4 portions
- 1Lettuce, torn into pieces
- 2Tomatoes, in wedges
- ½Yellow onion, thinly sliced
- 3 tbspOlive oil, extra virgin
- 1 tbspVinegar, wine vinegar
- to tasteSalt
Method
- Wash the lettuce, drain it well and tear or cut it into pieces. Put it in a salad bowl.
- Cut the tomatoes into wedges and the onion into thin slices, and add them to the lettuce.
- Just before serving, season with salt, sprinkle over the vinegar and olive oil and toss.
