Bonito con tomate – tuna in tomato sauce
Chunks of bonito (albacore tuna) briefly seared and finished in a sauce of fresh tomatoes with slowly softened onion and green pepper: the summer dish of Spain's Cantabrian coast. Out of season it is made with tuna, and it is even better the next day.

Ingredients for 4 portions
- 2Yellow onions, chopped
- 2Italian green peppers, chopped
- 2 clovesGarlic, chopped
- 5 tbspOlive oil
- 1 kgTomato, ripe
- 1 tspSugar
- to tasteSalt
- 800 gFresh tuna, in chunks

Method
- Chop the onions, green peppers and garlic.
- Heat 3 tbsp of the oil in a casserole and cook the vegetables gently for 15 minutes, stirring now and then, until very soft.
- Meanwhile, halve the tomatoes and grate them on a box grater, discarding the skins.
- Add the tomatoes and sugar, season with salt and simmer gently for 25 minutes, until the sauce has thickened.
- Meanwhile, remove any skin and bones from the fish, cut it into 3–4 cm chunks and season with salt.
- Heat the rest of the oil in a frying pan over a high heat and sear the tuna for 1 minute a side, just to seal it.
- Add the tuna to the sauce and leave over a very low heat for 5 minutes, until just cooked through; any longer and it turns dry.
- Serve with the sauce and bread for mopping it up.
