Camarones al mojo de ajo – garlic prawns with rice

Prawns fried in butter with plenty of chopped garlic, rings of guajillo chilli and a squeeze of lime, served with white rice and a simple salad. The garlic is cooked slowly so it turns golden and sweet, not bitter.

Method

  1. Rinse the rice in a sieve under cold water until the water runs almost clear, then drain well.
  2. Heat the oil in a saucepan over a medium heat and fry the rice, stirring often, for about 5 minutes, until opaque white. Stir in the chopped onion and garlic and fry for 1 minute more.
  3. Pour in the hot water, crumble in the stock cube and add salt. When it boils, cover, turn the heat right down and cook for 18 minutes without lifting the lid.
  4. Meanwhile, pat the prawns dry with kitchen paper and season with salt and pepper. Finely chop the garlic and cut the guajillo chillies into rings.
  5. Make the salad: shred the lettuce, slice the tomatoes and cucumber and cut the limes into wedges.
  6. Melt the butter with the oil in a large frying pan over a low heat and cook the garlic and chilli for about 5 minutes, stirring, until the garlic is pale golden. Burnt garlic turns bitter.
  7. Turn the heat up to medium-high, add the prawns and cook for 2 minutes per side, until pink. Squeeze over the lime juice and scatter with the parsley.
  8. Fluff the rice with a fork and serve the prawns with all their garlic butter, the rice, salad and lime wedges.
