Chard with potatoes and garlic
Chard and potatoes boiled, then tossed in olive oil with fried garlic slices and paprika: an everyday Spanish first course or light supper. It is also made with chickpeas.

Ingredients for 4 portions
- 1 kgSwiss chard
- 800 gPotato, in chunks
- to tasteSalt
- 5 tbspOlive oil
- 4 clovesGarlic, sliced
- 1 tspPaprika, sweet
Method
- Wash the chard well. Cut the stalks from the leaves, pull off any strings and cut the stalks into 3 cm pieces. Roughly chop the leaves.
- Peel the potatoes and cut them into chunks.
- Bring plenty of salted water to the boil in a large pan. Add the potatoes and stalks and cook for 10 minutes, then add the leaves and cook for 10 minutes more, until everything is tender.
- Meanwhile, heat the oil in a large frying pan and gently fry the garlic slices over a low heat until just golden.
- Drain the vegetables well, pressing the leaves lightly to squeeze out the water.
- Take the frying pan off the heat and stir in the paprika. Add the chard and potatoes and toss over a medium heat for 3 minutes.
