Chicken tostadas
Crisp tostadas spread with refried beans and piled with shredded chicken, lettuce, crema, crumbled cheese and avocado – an easy Mexican supper, also made with chicken tinga or spiced mince.

Ingredients for 4 portions
- 500 gChicken breast
- ½Yellow onion, in one piece
- 1 cloveGarlic
- to tasteSalt
- ½Lettuce, finely shredded
- 150 gQueso fresco, crumbled
- 450 gRefried beans, 1 can
- 12Tostada shells
- 150 mlMexican crema
- 1Avocado
- to tasteHot pepper sauce
Method
- Put the chicken in a pan with the piece of onion, the garlic and some salt, cover with water and bring to the boil.
- Simmer over medium heat for 20 minutes, until cooked through, then let the chicken cool a little in its broth.
- Meanwhile, finely shred the lettuce and crumble the cheese.
- Warm the refried beans in a frying pan with a splash of water, stirring, until creamy and easy to spread.
- Lift out the chicken and shred it with two forks.
- Slice the avocado. Spread each tostada with beans and top with chicken, lettuce, crema, cheese and avocado. Serve three per person, with hot sauce to taste.
