Green beans with potatoes and garlic
Green beans and potatoes boiled together, then tossed in garlic and paprika oil: a classic Spanish first course or light supper. Flat or round beans, fresh or frozen, all work, and many add diced serrano ham.

Ingredients for 4 portions
- 600 gGreen beans, trimmed, in pieces
- 600 gPotato, in chunks
- to tasteSalt
- 4 tbspOlive oil
- 3 clovesGarlic, sliced
- 100 gProsciutto, diced (optional)
- 1 tspPaprika, sweet
Method
- Peel the potatoes and cut them into chunks. Top and tail the beans and cut them into 4 cm lengths.
- Put the potatoes and beans in a pan, cover with water and add salt. Bring to the boil and cook for about 20 minutes, until everything is tender.
- Meanwhile, heat the oil in a large frying pan and gently fry the garlic, and the ham if using, over a low heat until the garlic is just golden.
- Drain the potatoes and beans well.
- Take the frying pan off the heat and stir in the paprika. Add the potatoes and beans and toss over a medium heat for 2 minutes.
