Ham and cheese toastie (sándwich mixto)
Spain's classic quick supper: sliced white bread with ham and cheese, buttered on the outside and toasted in a frying pan until golden and the cheese has melted. In Catalonia it's called a bikini; it's also made in a sandwich toaster or topped with a fried egg.

Ingredients for 4 portions
- 4 tbspButter, softened
- 16 slicesBread, sliced white bread
- 200 gHard cheese, 16 thin slices
- 200 gHam, sliced
Method
- Spread a thin layer of butter over one side of each slice of bread.
- Lay 8 slices butter-side down. Top each with a slice of cheese, some ham and another slice of cheese, then cover with the remaining bread, butter-side up.
- Heat a large frying pan over a medium-low heat. Toast the sandwiches in batches for 2–3 minutes a side, pressing them down lightly with a spatula, until golden and the cheese has melted.
- Cut the sandwiches in half diagonally and serve hot, two per person.
