Hervido – boiled potatoes and vegetables with olive oil
Valencia's everyday supper: potatoes, onion, carrot, green beans and courgette boiled until tender and dressed with good olive oil and salt. Many cook an egg in the same pan or add a splash of vinegar.

Ingredients for 4 portions
- 800 gPotato, peeled, in large chunks
- 2Yellow onions, peeled, halved
- 2Carrots, peeled, in chunks
- to tasteSalt
- 400 gGreen beans, trimmed, in pieces
- 1Courgette, in chunks
- 4 tbspOlive oil, to dress
- 1 tbspVinegar (optional)
Method
- Peel the potatoes, onions and carrots. Cut the potatoes into large chunks, halve the onions and cut the carrots into pieces.
- Put the potatoes, onions and carrots in a large pan, cover with water and add salt.
- Bring to the boil and cook for 15 minutes.
- Trim the green beans and cut them into pieces, and cut the courgette into large chunks.
- Add the green beans and cook for 10 minutes.
- Add the courgette and cook for 6 more minutes, until all the vegetables are tender.
- Drain and arrange the vegetables on plates. Drizzle with the olive oil, sprinkle with a little salt and add a splash of vinegar if you like.
