Pasta with tuna and tomato
Macaroni or spirals in a quick sauce of softened onion, ready-made tomato sauce, tinned tuna and oregano, topped with grated cheese. A Spanish storecupboard supper; also made with a splash of cream or baked with cheese on top.

Ingredients for 4 portions

- 1Yellow onion, finely chopped
- 2 tbspOlive oil
- 400 gPasta, macaroni or spirals
- 400 gReady-made tomato sauce
- 250 gTuna, 3 small tins, drained
- 1 tspOregano
- 60 gGrated cheese
Method
- Put a large pan of well-salted water on to boil for the pasta.
- Peel and finely chop the onion.
- Heat the oil in a frying pan and gently fry the onion over a low heat for 8 minutes, until soft and translucent.
- Cook the pasta according to the packet, about 11 minutes.
- Stir the tomato sauce, flaked tuna and oregano into the onion and heat through for 4–5 minutes.
- Drain the pasta and mix it with the sauce.
- Serve with grated cheese to sprinkle over.
