Peas with serrano ham
Peas softened with onion, garlic and diced serrano ham: a quick, time-honoured Spanish starter or supper made with frozen peas. Many add chopped hard-boiled egg or a poached egg on top.

Ingredients for 4 portions
- 1Yellow onion, finely chopped
- 2 clovesGarlic, finely chopped
- 3 tbspOlive oil
- 150 gProsciutto, diced
- 800 gGreen peas, frozen
- ≈ 100 mlWater
- to tasteSalt
Method
- Peel and finely chop the onion and garlic.
- Heat the oil in a saucepan over a medium heat and soften the onion for 8 minutes. Add the garlic and fry for 1 more minute.
- Add the ham and fry for 1 minute, without letting it dry out.
- Add the peas, still frozen, and the water. Cover and cook over a medium-low heat for 10 minutes, until tender.
- Season with salt, carefully, as the ham is already salty, and serve straight away.
