Polenta with meat sauce (polenta con tuco)
Creamy polenta with butter and cheese, topped with a thick tomato and mince sauce (tuco). A thrifty winter classic in Argentina and Uruguay, also made with beef stew (estofado) or with a meatless tomato sauce and chunks of mild cheese.

Ingredients for 4 portions
- 2 tbspRapeseed oil
- 1Yellow onion, chopped
- 1Bell pepper, chopped
- 2 clovesGarlic, finely chopped
- 500 gBeef mince
- 800 gCrushed tomatoes
- 2Bay leaves
- 1 tspOregano
- 1 tspPaprika
- to tasteSalt
- to tasteBlack pepper
- ≈ 1 lWater
- 250 mlMilk
- 1 cubeVegetable stock
- 250 gPolenta
- 2 tbspButter
- 60 gGrated cheese
Method
- Heat the oil in a saucepan over medium heat and soften the onion and pepper for about 8 minutes. Add the garlic and cook for 1 minute.
- Turn up the heat, add the mince and cook, breaking it up with a wooden spoon, until no longer pink.
- Add the crushed tomatoes, bay leaves, oregano, paprika, salt and pepper. Cover and simmer the sauce over low heat for 30 minutes, stirring now and then, until thick.
- Meanwhile, bring the water, milk and stock cube to the boil in another saucepan.
- Pour in the polenta in a steady stream, whisking all the time, then cook over low heat, stirring, for about 5 minutes or as the packet says, until thick and coming away from the sides of the pan.
- Take off the heat and stir in the butter and half the cheese.
- Spoon the polenta on to plates, top with the meat sauce and sprinkle with the rest of the cheese.
