Pork in tomato sauce (magro con tomate)
Cubes of lean pork slowly stewed in tomato with onion, green pepper and garlic until the meat is tender and the sauce thick: a home and school-dinner classic in Murcia, Andalusia and Valencia. It's eaten with bread for the sauce, and sometimes with chips or white rice.

Ingredients for 4 portions
- 800 gPork leg, in 3 cm cubes
- to tasteSalt
- 4 tbspOlive oil
- 1Yellow onion, finely chopped
- 1Italian green pepper, finely chopped
- 3 clovesGarlic, finely chopped
- 100 mlWhite wine
- 800 gCrushed tomatoes
- 1Bay leaf
- 1 tspSugar

- 250 gBread, sliced
Method
- Season the pork with salt. Heat the oil in a casserole and brown the meat over a high heat in batches, about 8 minutes. Lift it out.
- In the same casserole, gently fry the onion, pepper and garlic over a medium heat for about 10 minutes, until soft.
- Return the meat, pour in the wine and let it bubble for 2 minutes to cook off the alcohol.
- Add the tomatoes, bay leaf and sugar and stir.
- Cover and simmer over a low heat for about 45 minutes, stirring now and then, until the meat is tender and the sauce has thickened. Season with salt to taste.
- Remove the bay leaf and serve the pork with bread to mop up the sauce.
