Salchichas a la mexicana – sausages with tomato, onion and chilli
Sliced hot dog sausages cooked with tomato, onion and serrano chilli, served with refried beans and warm tortillas. One of the quickest, cheapest everyday dishes in Mexico, often with egg or diced potato added.

Ingredients for 4 portions
- 8Vienna sausages
- 3Tomatoes
- ½Yellow onion
- 2Serrano chiles
- 1 tbspRapeseed oil
- to tasteSalt
On the side
- 450 gRefried beans, 1 tin
- 12Corn tortillas
Method
- Chop the tomatoes, onion and chillies and slice the sausages. Deseed the chillies if you want it milder.
- Warm the beans in a small pan over a low heat, stirring now and then.
- Heat the oil in a frying pan over a medium heat and fry the sausages with the onion and chillies for 4 minutes, until the sausages are lightly browned.
- Add the tomatoes, season with salt and cook for 5 minutes, until the tomatoes have broken down and it is juicy.
- Warm the tortillas in a dry frying pan and serve the sausages with the beans and warm tortillas.
