San jacobos – breaded ham and cheese with chips
Slices of cooked ham wrapped around cheese, breaded and fried until the cheese melts: a children's favourite, served with chips. They are also made with thin pork loin steaks instead of ham, or served with a salad.

Ingredients for 4 portions
- 250 gHam, 16 thin slices
- 160 gHard cheese, 8 slices
- 4 tbspPlain flour
- 2Eggs
- 100 gBreadcrumbs
- 3 tbspOlive oil, for frying
On the side
- 800 gPotato, peeled, cut into chips
- 4 tbspOlive oil, for frying
- to tasteSalt
Method
- Lay a slice of cheese on a slice of ham, cover with another slice of ham and fold the edges in so the cheese is completely enclosed. Make 8.
- Set out three shallow bowls with flour, beaten egg and breadcrumbs. Coat each parcel first in flour, then in egg and finally in breadcrumbs, pressing the crumb on well.
- Peel the potatoes and cut them into 1 cm thick chips. Rinse them and pat dry thoroughly with a tea towel.
- Heat plenty of oil, about 2 cm deep, in a deep frying pan over a medium-high heat and fry the chips in batches for 8–10 minutes, until golden outside and tender inside. Drain on kitchen paper, sprinkle with salt and keep warm.
- Heat oil about 1 cm deep in another frying pan over a medium heat and fry the parcels in batches for 2 minutes a side, until golden and the cheese has melted. Drain on kitchen paper.
- Serve straight away with the chips.
