Sardinas en salsa – sardines in tomato sauce on tostadas
Tinned sardines in tomato sauce cooked with fresh tomato, onion and serrano chilli, piled onto crisp tostadas with lettuce, avocado and crema. A cheap everyday and Lent dish in Mexico, also eaten with rice or in tacos.

Ingredients for 4 portions
- ½Yellow onion, chopped
- 2Serrano chiles, finely chopped
- 1 cloveGarlic, chopped
- 3Tomatoes, chopped
- ½Lettuce, finely shredded
- 2 tbspRapeseed oil
- 1 tinSardines in tomato sauce
- to tasteSalt
- to tasteBlack pepper
- 2Avocados, sliced
- 2Limes, in wedges
- 12Tostada shells
- 100 mlMexican crema
- to tasteHot pepper sauce (optional)
Method
- Chop the onion, chillies, garlic and tomatoes, and finely shred the lettuce.
- Heat the oil in a frying pan over a medium heat and fry the onion, chillies and garlic for 3 minutes, until the onion is translucent.
- Add the tomatoes and cook, stirring, for 5 minutes, until softened.
- Add the sardines with their tomato sauce and break them into chunks with a spoon, removing the backbones if you like. Simmer for 5 minutes, until slightly thickened, and season with salt and pepper.
- Slice the avocados and cut the limes into wedges.
- Spread the sardine mixture over the tostadas and top with lettuce, avocado and a drizzle of crema. Serve with lime and hot sauce.
