Stuffed roast chicken with potatoes
A whole chicken stuffed with milk-soaked bread, ham, olives, egg and onion, roasted in the same tin as the potatoes. Made for Christmas, New Year and Sunday lunch; also done with a small turkey, with mince in the stuffing, or boned and rolled.

Ingredients for 4 portions
- 1.5 kgWhole roasting chicken, 1 whole chicken
- 1Lemon, juiced
- 2 clovesGarlic, finely chopped
- 1 tspPaprika
- to tasteSalt
- to tasteBlack pepper
- 150 gBread, day-old, crusts removed
- 150 mlMilk
- 1 tbspButter
- 1Yellow onion, finely chopped
- 150 gHam, diced
- 60 gGreen olives, pitted, chopped
- 1Egg
- 2 tbspParsley, chopped
- to tasteNutmeg
- 1 kgPotato, peeled, in large chunks
- 2 tbspRapeseed oil, for the potatoes
- ≈ 200 mlWater
Method
- Pat the chicken dry inside and out. Rub it all over with the lemon juice, garlic, paprika, salt and pepper.
- Heat the oven to 180 °C. Tear the bread into a bowl and pour over the milk.
- Soften the onion in the butter over a medium heat for about 5 minutes, until translucent.
- Squeeze the bread lightly and mix it with the onion, ham, olives, egg and parsley. Season with nutmeg, salt and pepper.
- Stuff the chicken loosely with the mixture. Close the opening with cocktail sticks or sew it up with kitchen string, and tie the legs together.
- Put the chicken in a large roasting tin with the potatoes around it. Drizzle the potatoes with the oil, season with salt and pour the water into the tin.
- Roast for about 1 hour 40 minutes, basting the chicken now and then and turning the potatoes once. It is done when golden and the juices run clear when you pierce the thigh.
- Leave the chicken to rest for 10 minutes, loosely covered with foil.
- Remove the sticks or string, spoon out the stuffing and carve the chicken. Serve with the stuffing and potatoes.
