Tacos de bistec – seared steak and onion tacos
Thin steak seared hot, chopped and mixed with golden onions, for tacos with raw green salsa, onion, coriander and lime, with beans on the side. Tacos de bistec are among Mexico's favourite home-made tacos.

Ingredients for 4 portions
- 600 gMinute steak
- to tasteSalt
- to tasteBlack pepper
- 2Yellow onions, thinly sliced
- 2 tbspRapeseed oil
- 16Corn tortillas
On the side
- 300 gTomatillo, husked
- 2Serrano chiles
- 1 cloveGarlic
- 25 gCoriander
- ½Yellow onion, finely chopped
- 3Limes, in wedges
- 400 gBlack beans, cooked, with their liquid
Method
- Season the steaks on both sides with salt and pepper.
- Blend the raw tomatillos with the chillies, garlic, a little of the coriander and some salt to a slightly chunky salsa. Pour into a bowl.
- Thinly slice the two onions for the meat. Finely chop the half onion and the rest of the coriander, and cut the limes into wedges.
- Warm the beans in their liquid in a small pan over a low heat, stirring now and then.
- Heat half the oil in a large frying pan over a high heat and sear the steaks in batches, 1–2 minutes a side. Transfer to a chopping board.
- Fry the sliced onions in the rest of the oil in the same pan over a medium-high heat until soft and golden, about 8 minutes.
- Chop the meat into small pieces, return it to the pan and toss with the onions for 1 minute.
- Warm the tortillas in a dry frying pan and wrap them in a tea towel.
- Serve the meat with the tortillas so everyone can make their own tacos with chopped onion, coriander, salsa and lime. Serve the beans on the side.
