Tortas – Mexican ham, cheese and avocado rolls
Toasted Mexican rolls filled with refried beans, mayonnaise, ham, panela cheese, tomato, avocado and pickled jalapeños – a quick supper in many Mexican homes, also made with breaded steak or roast pork.

Ingredients for 4 portions
- 4Crusty white rolls, split
- 250 gRefried beans
- 2Tomatoes
- 2Avocados
- 4 tbspMayonnaise
- 250 gHam, sliced
- 200 gPanela cheese, sliced
- 60 gPickled jalapeño slices
Method
- Split the rolls lengthways and pull out a little of the crumb if they are thick. Toast the cut sides in a hot, dry frying pan for 2 minutes, until golden.
- Warm the refried beans in a small pan with a splash of water until easy to spread.
- Slice the tomatoes and avocados.
- Spread the bottom halves with beans and the tops with mayonnaise. Layer on the ham, cheese, tomato, avocado and a few jalapeño slices, and close the rolls.
- If you like, press the tortas in the hot pan for 1 minute per side to warm them through, then serve straight away.
