Warm goat's cheese salad with walnuts and honey
Slices of goat's cheese log grilled with honey on baguette toasts, served on mixed leaves with cherry tomatoes, walnuts and raisins and a balsamic dressing. An easy weeknight supper; it is also made with apple or berries.

Ingredients for 4 portions
- 300 gGoat cheese, in 1.5 cm slices
- 200 gBread, baguette, sliced
- 2 tbspHoney
- 200 gLettuce, mixed leaves
- 250 gCherry tomato, halved
- 50 gWalnuts, roughly chopped
- 40 gRaisins
- 3 tbspOlive oil
- 1 tbspBalsamic vinegar of Modena
- to tasteSalt
Method
- Preheat the oven grill to 220 °C.
- Wash the salad leaves and drain them well. Halve the cherry tomatoes.
- Cut the goat's cheese into 1.5 cm slices and put one on each slice of bread on a baking tray. Drizzle with half the honey.
- Grill for 4–5 minutes, until the cheese is soft and browned at the edges.
- Meanwhile, whisk together the oil, balsamic vinegar, the rest of the honey and a pinch of salt.
- Divide the leaves and tomatoes between plates, scatter over the walnuts and raisins and drizzle with the dressing.
- Top with the hot cheese toasts and serve straight away.
