Baked gnocchi with tomato sauce, spinach and mozzarella
Fresh gnocchi in a quick tomato sauce with spinach, baked under mozzarella and Parmesan – a popular vegetarian weeknight dinner. The gnocchi can also be pan-fried and served with butter, sage and Parmesan.

Ingredients for 4 portions
- 1Yellow onion
- 2 clovesGarlic
- 1 tbspOlive oil
- 800 gCrushed tomatoes
- 1 tspOregano, dried
- to tasteSalt
- to tasteBlack pepper
- 800 gFresh gnocchi
- 100 gBaby spinach
- 1Mozzarella, torn into pieces
- 1 dlParmesan, grated
Method
- Heat the oven to 225 °C. Peel and chop the onion and garlic.
- Fry the onion and garlic in the olive oil in a large frying pan or casserole over a medium heat until the onion has softened.
- Add the crushed tomatoes and oregano and simmer the sauce for 10 minutes. Season with salt and pepper.
- Stir the gnocchi and spinach into the sauce and let the spinach wilt.
- Tip everything into an ovenproof dish. Scatter over the mozzarella and sprinkle with the Parmesan.
- Bake in the middle of the oven until the cheese has melted and browned and the gnocchi are soft, about 15 minutes.
- Leave to stand for a minute, then serve straight from the dish.
