Beef mince tacos with guacamole
Tacos the way Spanish homes make them: soft flour tortillas that everyone fills at the table with seasoned beef mince, guacamole, tomato, onion, lettuce and grated cheese. Also made with chicken or with corn tortillas.

Ingredients for 4 portions

- 1 tbspOlive oil
- 1Yellow onion, finely chopped
- 500 gBeef mince
- 25 gTaco seasoning, 1 sachet
- ≈ 100 mlWater
- 8Tortillas
On the side
- 2Avocados, ripe
- 1Lime, juiced
- 2Tomatoes, diced
- ½Red onion, finely chopped
- ½Lettuce, shredded
- 100 gGrated cheese
Method
- Make the guacamole: mash the avocados with the lime juice and a little salt using a fork. Press cling film onto the surface so it doesn't darken.
- Dice the tomatoes, finely chop the red onion and shred the lettuce. Put them in bowls on the table along with the cheese.
- Heat the oil in a frying pan and fry the onion over a medium heat for 4 minutes, until softened.
- Add the mince and fry over a high heat for about 6 minutes, breaking it up with a spatula, until no longer pink.
- Stir in the taco seasoning and water and simmer for 3–4 minutes, until most of the liquid has cooked off.
- Warm the tortillas one at a time in a dry frying pan, about 20 seconds per side, and keep them warm wrapped in a clean tea towel.
- Put the mince, guacamole and toppings on the table and let everyone fill their own tacos.
