Chicken noodle stir-fry
A quick stir-fry of chicken, egg noodles and crisp vegetables in a sweet soy sauce, topped with sesame seeds.

Ingredients for 4 portions
- 500 gChicken breast, in strips
- 250 gEgg noodles
- 250 gBroccoli, in small florets
- 2Carrots, in thin sticks
- 1Bell pepper, in strips
- 3Spring onions, sliced
- 2 clovesGarlic, finely chopped
- 1 tbspGinger, grated
- 4 tbspSoy sauce
- 1 tbspHoney
- 1 tspCornflour
- ≈ 1 dlWater
- 3 tbspRapeseed oil
- 2 tbspSesame seeds
Method
- Put water on to boil for the noodles. Cut the chicken into strips, the carrots into thin sticks and the pepper into strips. Cut the broccoli into small florets, slice the spring onions, chop the garlic and grate the ginger. Stir the soy sauce, honey, cornstarch and water together into a sauce.
- Cook the noodles according to the package, about 4 minutes. Drain and rinse them quickly in cold water so they don't stick together.
- Heat half the oil in a wok or large frying pan. Stir-fry the chicken over high heat until cooked through, 4–5 minutes, then set it aside.
- Stir-fry the broccoli, carrot and pepper in the rest of the oil for 3 minutes. Add the garlic and ginger and stir-fry for another minute.
- Add the noodles and chicken and pour over the sauce. Toss until the sauce has thickened and everything is hot.
- Sprinkle with spring onion and sesame seeds and serve straight away.
