Courgettes stuffed with mince
Courgette boats filled with mince, onion and tomato sauce, topped with cheese and baked until golden. They are also stuffed with tuna or vegetables, and some add béchamel under the cheese.

Ingredients for 4 portions
- 4Courgettes, medium
- 3 tbspOlive oil
- to tasteSalt
- 1Yellow onion, finely chopped
- 2 clovesGarlic, finely chopped
- 400 gMixed mince
- to tasteBlack pepper
- 200 gReady-made tomato sauce
- 100 gGrated cheese
Method
- Heat the oven to 200 °C. Wash the courgettes, halve them lengthways and scoop out the flesh with a teaspoon, leaving a 0.5 cm wall. Chop the scooped-out flesh.
- Lay the courgette boats in a baking dish, season with salt, drizzle with a third of the oil and bake for 15 minutes, until they start to soften.
- Meanwhile, heat the rest of the oil in a frying pan and soften the onion and garlic over a medium heat for 5 minutes.
- Add the mince and the chopped courgette flesh, season with salt and pepper and fry for 8 minutes, breaking up the meat, until it is no longer pink.
- Stir in the tomato sauce and cook for 5 more minutes, until the filling is moist but not runny.
- Fill the courgette boats with the mince and sprinkle with the cheese.
- Bake for 15 minutes, until the cheese is golden and the courgettes are tender.
- Serve the stuffed courgettes straight from the oven.
