Griddled green asparagus
Green asparagus cooked on a hot griddle with a little olive oil, finished with coarse salt and a drizzle of garlic oil. A spring side for griddled meat and fish; in Spain they are also scrambled with eggs (revuelto).

Ingredients for 4 portions
- 500 gGreen asparagus, 2 bunches
- 1 cloveGarlic, finely chopped
- 2 tbspOlive oil, for the garlic oil
- 1 tbspOlive oil, for cooking
- to tasteSalt, coarse
Method
- Rinse the asparagus and snap off the woody ends; each stalk breaks where it turns tender. Dry well.
- Mix the chopped garlic with the oil for the garlic oil.
- Heat a griddle or large frying pan over a high heat. Toss the asparagus in the oil and cook for 6–8 minutes, turning now and then, until tender and charred in places.
- Lay the asparagus on a dish, drizzle with the garlic oil and sprinkle with coarse salt. Serve hot.
