Ham and cheese empanadas
The children's favourite: cooked ham and firm mozzarella in ready-made pastry discs, done in under an hour. Also fried rather than baked, or made with chopped hard-boiled egg; some add a pinch of oregano.

Ingredients for 4 portions
- 250 gHam, sliced
- 400 gMozzarella, cut into sticks
- 24Empanada discs, for baking
- 1Egg, beaten, for brushing
Method
- Heat the oven to 200 °C. Cut the mozzarella into sticks and fold the ham slices to fit the discs.
- Put a little ham and a stick of mozzarella in the centre of each disc. Wet the edge with water, fold into a half-moon and crimp the edge or press it firmly with a fork, so the cheese can't escape.
- Place the empanadas on a baking tray lined with baking paper and brush with the beaten egg.
- Bake for 12–15 minutes until golden.
- Leave to rest for 5 minutes before serving – the cheese inside is very hot.
