Sorrentinos with tomato sauce
Large round pasta parcels filled with ham, cheese and ricotta – a classic from Mar del Plata – with a homemade tomato sauce (salsa fileto) and grated cheese. They're bought fresh from the pasta shop and are just as often served with salsa rosa, tomato sauce with cream.

Ingredients for 4 portions
- 24Sorrentinos (ham and cheese filled pasta)
- 3 tbspOlive oil
- 1Yellow onion, finely chopped
- 2 clovesGarlic, finely chopped
- 800 gCrushed tomatoes
- 1Bay leaf
- 1 tspOregano
- 3 mlSugar
- to tasteSalt
- to tasteBlack pepper
- 80 gGrated cheese
Method
- Heat the olive oil in a medium saucepan over medium heat. Soften the onion for about 5 minutes until translucent, then add the garlic and cook for 1 minute more.
- Add the crushed tomatoes, bay leaf, oregano, sugar, salt and pepper. Simmer the sauce over low heat, partly covered, for about 20 minutes, stirring now and then, until thickened.
- Meanwhile, bring a large pan of well-salted water to the boil.
- Cook the sorrentinos at a gentle boil so they don't split, for 8–10 minutes or as the packet says, until the pasta is tender. Lift them out with a slotted spoon.
- Remove the bay leaf. Serve the sorrentinos topped with the sauce and sprinkled with the grated cheese.
