Ingredients for 4 portions
- 500 gPlain flour
- 2 tspDried yeast
- 1 tspSalt, for the dough
- ≈ 300 mlWater, lukewarm
- 2 tbspOlive oil, for the dough
- 1 tbspOlive oil, for the trays

- 1 tspOregano, dried
- to tasteSalt, for the sauce
- 400 gMozzarella, grated or torn
- 200 gHam, in strips
- 50 gGreen olives, pitted (optional)
Method
- Mix the flour, dried yeast and salt in a large bowl. Add the lukewarm water and the oil and knead until the dough is smooth and elastic, about 10 minutes.
- Cover the bowl and leave the dough to rise somewhere warm until doubled in size, about 1 hour.
- Stir the crushed tomatoes with the oregano and a pinch of salt.
- When the dough has nearly finished rising, heat the oven to 250 °C. Grate or tear the mozzarella and cut the ham into strips.
- Divide the dough in two and press each half out thinly with your hands on an oiled baking tray.
- Spread the tomato sauce over the bases, then top with the mozzarella, the ham and the olives, if using.
- Bake the pizzas for 12–15 minutes, both trays at once with the fan on or one after the other, until the crusts are golden and the cheese is bubbling.
- Cut into slices and serve straight away.
