Method

  1. Peel the potatoes and halve any large ones. Put them in a pan, cover with water, add salt and bring to the boil.
  2. Boil the potatoes until tender, about 20 minutes.
  3. Make a few cuts through the fat edge of each chop so they do not curl in the pan. Season with salt and pepper.
  4. Heat two thirds of the butter in a large frying pan and fry the chops over medium-high heat for 3–5 minutes per side, until browned and cooked through (about 65 °C inside). Set aside to rest under foil.
  5. Core the apples and cut them into wedges. Fry them in the rest of the butter in the same pan for about 4 minutes, until soft and golden. Set aside.
  6. Pour the water into the pan, crumble in the stock cube and scrape up the pan juices. Whisk the flour into the cream and add it with the soy sauce. Boil the sauce for 3–4 minutes and add the resting juices from the chops.
  7. Drain the potatoes and serve the chops with the fried apples, cream sauce and potatoes.
