Machaca con huevo – dried shredded beef with eggs
Dried shredded beef (machaca) fried with tomato, onion and serrano chilli and scrambled with eggs, served with refried beans and flour tortillas – a classic of northern Mexico, eaten for breakfast or supper and often rolled into burritos.

Ingredients for 4 portions
- 2 tbspRapeseed oil
- ½Yellow onion, finely chopped
- 2Serrano chiles, finely chopped
- 2Tomatoes, diced
- 150 gMachaca (dried shredded beef)
- 8Eggs
- to tasteSalt

- 450 gRefried beans, 1 can
- 8Tortillas
Method
- Finely chop the onion and chillies and dice the tomatoes.
- Heat the oil in a large frying pan over a medium heat and soften the onion and chilli for 3 minutes.
- Add the tomatoes and cook for 3 minutes, until softened.
- Add the machaca, break it up with a spoon and fry for 3 minutes, stirring, until lightly browned.
- Beat the eggs, pour them over the machaca and stir over a medium-low heat for 3–4 minutes, until set but still soft. Taste before adding salt, as the machaca is already salty.
- Warm the refried beans with a splash of water in a small pan, and the flour tortillas in a dry frying pan.
- Serve the machaca and eggs with the beans and warm tortillas, so everyone can fill their own.
