Mexican-style burgers with avocado and pickled jalapeños
Homemade beef burgers bound with egg and breadcrumbs, topped with melted cheese, lettuce, tomato, onion, avocado and pickled jalapeños – the way Mexican families make them for supper. They are also made with bacon, sometimes with chips on the side.

Ingredients for 4 portions
- 600 gBeef mince
- 1Egg
- 3 tbspBreadcrumbs
- ½Yellow onion, finely chopped
- to tasteSalt
- to tasteBlack pepper
- 1 tbspRapeseed oil
- 80 gHard cheese, 4 slices of processed cheese
- 4Burger buns
- 1 tbspButter
- ½Lettuce, a few leaves
- 1Tomato, sliced
- ½Yellow onion, thinly sliced
- 1Avocado, sliced
- 60 gPickled jalapeño slices
- 3 tbspMayonnaise
- 3 tbspKetchup
- 1 tbspMustard
Method
- Mix the mince with the egg, breadcrumbs, chopped onion, salt and pepper. Shape into 4 patties about 1.5 cm thick and press a small dip into the centre with your thumb so they don't puff up as they cook.
- Wash and dry the lettuce, and slice the tomato, onion and avocado.
- Heat the oil in a frying pan over a medium-high heat and fry the patties for 4 minutes a side. For the last minute, lay a slice of cheese on each and cover so the cheese melts.
- Butter the buns and toast them in a dry frying pan for 1–2 minutes, until golden.
- Spread the buns with mayonnaise, ketchup and mustard. Build the burgers with the patty and cheese, lettuce, tomato, onion, avocado and jalapeños.
