Ingredients for 4 portions
- 1Yellow onion, chopped
- 2Carrots, diced
- 2Celery, stalks, sliced
- 2 clovesGarlic, chopped
- 2Potatoes, diced
- 2 tbspOlive oil
- 2 tbspTomato paste
- 400 gCrushed tomatoes
- 2 cubesVegetable stock
- ≈ 1.2 lWater
- 1Courgette, diced
- 400 gKidney beans, 1 can, rinsed
- 1 ½ dlPasta, small pasta, e.g. macaroni
- 1 dlParmesan, grated
- ½Basil, pot
- to tasteSalt
- to tasteBlack pepper

Method
- Chop the onion and garlic. Dice the carrots and potatoes and slice the celery.
- Gently fry the onion, carrot, celery and garlic in the olive oil in a large pot for about 5 minutes, without letting them brown.
- Stir in the tomato paste and add the potatoes. Pour in the crushed tomatoes, water and stock cubes and bring to a boil.
- Simmer the soup under a lid for 12 minutes.
- Dice the zucchini and grate the parmesan.
- Add the zucchini, pasta and rinsed beans and simmer for another 8–10 minutes, until the pasta is tender.
- Season with salt and pepper. Serve the soup with grated parmesan, basil and bread.
