Pan-fried fish with dill butter, potatoes and broccoli
Flour-dusted white fish fried in butter, with melted dill and lemon butter, boiled potatoes and broccoli. Simple and quick.

Ingredients for 4 portions
- 600 gCod fillet, cod, saithe or haddock, in 4 pieces
- 3 tbspPlain flour
- to tasteSalt
- to tasteBlack pepper
- 2 tbspButter, for frying
- 80 gButter, for the dill butter
- 3 ½ tbspDill, finely chopped
- 1Lemon, zest and wedges

Method
- Peel the potatoes and halve any large ones. Put them in a pan, cover with water, add salt and bring to the boil.
- Boil the potatoes until tender, about 20 minutes.
- Cut the broccoli into florets and peel and slice the stalk. Put a pan of lightly salted water on to boil.
- Pat the fish dry with kitchen paper. Season with salt and pepper and dust the pieces in flour, tapping off the excess.
- Fry the fish in butter in a frying pan over medium heat for 3–4 minutes per side depending on thickness, until it just flakes. Keep warm.
- Boil the broccoli for 3–4 minutes so that it still has a little bite.
- Melt the butter slowly in a small saucepan without letting it colour. Stir in the dill and a little grated lemon zest.
- Drain the potatoes and broccoli. Serve the fish with the potatoes, broccoli, dill butter and lemon wedges.
