Pasta with tomato sauce
Simple weeknight pasta with a homemade sauce of crushed tomatoes, garlic and basil, topped with grated Parmesan. Add a pinch of chilli flakes to the sauce and it becomes an arrabbiata.

Ingredients for 4 portions
- 2 tbspOlive oil
- 1Yellow onion, finely chopped
- 3 clovesGarlic, finely chopped
- 800 gCrushed tomatoes, 2 tins
- 1 tspSugar
- to tasteSalt
- to tasteBlack pepper
- 1 dlBasil, leaves
- 400 gPasta, e.g. spaghetti or penne
- 1 dlParmesan, grated
Method
- Finely chop the onion and garlic.
- Heat the olive oil in a saucepan and gently fry the onion over a medium heat for about 5 minutes until soft but not coloured. Add the garlic and fry for another minute.
- Add the crushed tomatoes and sugar, season with salt and pepper and bring to the boil.
- Simmer the sauce uncovered over a low heat for 15 minutes, stirring now and then.
- Cook the pasta in plenty of salted water according to the packet instructions. Drain.
- Tear the basil into the sauce and check the seasoning. Toss the pasta with the sauce.
- Serve with grated Parmesan.
