Sausages in tomato sauce with rice
A weeknight dinner children love: fresh pork sausages browned and simmered in Spanish tomato sauce with onion, green pepper and a splash of white wine. Served with white rice or chips.

Ingredients for 4 portions
- 8Fresh pork sausages
- 2 tbspOlive oil
- 1Yellow onion, chopped
- 1Italian green pepper, chopped
- 2 clovesGarlic, chopped
- 100 mlWhite wine
- 400 gReady-made tomato sauce
On the side
- 250 gRice
- to tasteSalt
Method
- Prick the sausages with a fork. Heat the oil in a deep frying pan and brown the sausages on all sides over a medium heat for about 8 minutes. Lift out.
- In the same pan, gently fry the onion, pepper and garlic over a medium heat for about 10 minutes, until soft.
- Return the sausages, pour in the wine and let it bubble for 2–3 minutes to cook off the alcohol.
- Add the tomato sauce, cover and simmer gently for 15 minutes, until the sausages are cooked through and the sauce has thickened.
- Meanwhile, cook the rice in plenty of salted boiling water for about 15 minutes, then drain.
- Serve the sausages and sauce with the rice alongside.
