Sincronizadas – ham and cheese flour tortillas
Two flour tortillas sandwiched with ham and Oaxaca cheese, toasted on a griddle until the cheese melts and served in wedges with guacamole. One of the most common suppers in Mexican homes, sometimes with beans, crema or salsa.

Ingredients for 4 portions
- 8Tortillas
- 200 gHam, sliced
- 250 gOaxaca cheese, pulled into strings
On the side
- 2Avocados
- 1Lime, juiced
- ½Yellow onion, finely chopped
- 1Tomato, finely chopped
- 1Serrano chile, finely chopped
- 10 gCoriander, chopped
- to tasteSalt
Method
- For the guacamole, mash the avocados with the lime juice and some salt, then stir in the onion, tomato, chilli and coriander.
- Scatter cheese over 4 of the tortillas, top with the ham and a little more cheese, and cover each with another tortilla.
- Heat a griddle or large frying pan over a medium heat and cook the sincronizadas in batches, 2–3 minutes a side, pressing down with a spatula, until golden and the cheese has melted.
- Cut each into four wedges and serve hot with the guacamole.
