Tortellini with creamy tomato sauce
One of the quickest weeknight dinners: fresh cheese tortellini in a creamy tomato sauce with garlic and basil, topped with Parmesan. Just as good with meat-filled tortellini or ravioli.

Ingredients for 4 portions
- 1Yellow onion, finely chopped
- 2 clovesGarlic, finely chopped
- 1 tbspOlive oil
- 400 gCrushed tomatoes
- 2 dlCooking cream
- to tasteSalt
- to tasteBlack pepper
- 500 gCheese tortellini, fresh
- 3 ½ tbspBasil, leaves
- 1 dlParmesan, grated
Method
- Finely chop the onion and garlic.
- Fry the onion and garlic in the olive oil in a saucepan over a medium heat for 3–4 minutes, until the onion has softened.
- Add the crushed tomatoes and simmer the sauce uncovered for 10 minutes.
- Bring a large pan of salted water to the boil and cook the tortellini according to the packet instructions, usually 2–3 minutes. Drain.
- Stir the cream into the sauce and let it bubble for a couple of minutes. Season with salt and pepper.
- Fold the tortellini and basil into the sauce.
- Serve with grated Parmesan.
