Tortitas de carne – beef patties in tomato and chipotle sauce
Flat beef mince patties bound with egg and breadcrumbs, browned and then simmered in a thin tomato and chipotle sauce. An everyday dish from Mexico's cheap lunch canteens, eaten with rice, beans and corn tortillas.

- 600 gBeef mince
- 1Egg
- 5 tbspBreadcrumbs
- ½Yellow onion, finely chopped
- 1 cloveGarlic, finely chopped

- 3 tbspRapeseed oil, for frying
- 5Tomatoes
- 2Chipotle peppers in adobo
- ½Yellow onion, for the sauce

Method
- Mix the mince with the egg, breadcrumbs, onion, garlic, salt and pepper. Shape into 12 flat patties about 8 cm across.
- Heat the oil in a large frying pan and brown the patties in batches, 2–3 minutes per side. They don't need to be cooked through. Set aside.
- Blend the tomatoes with the chipotles, onion, garlic, water and stock cube.
- Pour off most of the fat from the pan, add the tomato sauce and cook over a medium heat for 5 minutes, until it darkens slightly.
- Return the patties to the pan, cover and simmer over a low heat for 15 minutes, turning them once.
- Warm the tortillas in a dry frying pan and serve the patties with plenty of sauce.
