Falukorv sausage baked with mustard, cheese and tomato tucked into the slits, served with homemade mash and green peas.

Method

  1. Heat the oven to 225 °C. Peel the potatoes and cut them into even pieces. Put them in a pot, cover with water and add salt.
  2. Boil the potatoes under a lid for about 20 minutes, until really soft.
  3. Peel the casing off the sausage and cut deep slits 1 cm apart, without cutting all the way through. Put it in an ovenproof dish, spread mustard into the slits and tuck a piece of cheese and a slice of tomato into each one.
  4. Bake the sausage in the middle of the oven for about 15 minutes, until the cheese has melted and browned.
  5. Warm the milk and butter. Drain the potatoes and mash them, ideally with a potato ricer. Beat in the warm milk and season with salt.
  6. Boil the peas in a little water for 2–3 minutes. Serve the sausage with the mashed potatoes, peas and ketchup.
