Fried Falu sausage with creamed macaroni
Swedish home cooking at its simplest: fried slices of Falu sausage with creamy macaroni in white sauce and ketchup. Cocktail sausages work just as well.

Ingredients for 4 portions
- 4 dlPasta, macaroni
- 2 tbspButter, for the sauce
- 2 tbspPlain flour
- 5 dlMilk
- to tasteSalt
- to tasteBlack pepper
- 600 gFalu sausage, sliced
- 1 tbspButter, for frying

Method
- Bring plenty of lightly salted water to the boil and cook the macaroni for about 8 minutes, until almost tender. Drain.
- Melt the butter in a saucepan and whisk in the flour. Gradually whisk in the milk and let the sauce boil for 3–4 minutes, until thickened.
- Peel the skin off the sausage and cut it into 1 cm slices. Fry the slices in butter in a frying pan over a medium heat for 2–3 minutes per side, until nicely browned.
- Fold the macaroni into the sauce and let it simmer for a couple of minutes, stirring. Season with salt and pepper.
- Serve the sausage with the creamed macaroni and ketchup.
