Baked kassler with pineapple and cheese
Sliced smoked pork loin baked with pineapple, a sauce of cream, chilli sauce and mustard, and grated cheese, served with mashed potatoes. Pipe the mash around the edge of the dish and it becomes kasslergratäng.

Ingredients for 4 portions
- 600 gSmoked pork loin, in 8 slices
- 2 ½ dlCooking cream
- 3 ½ tbspChili sauce
- 2 tbspMustard
- ½Pineapple
- 2 dlGrated cheese
On the side
- 1 kgPotato, floury
- to tasteSalt
- 2 tbspButter
- 2 dlMilk
Method
- Peel the potatoes and cut them into even pieces. Put them in a pan, cover with water, add salt and bring to the boil.
- Boil the potatoes until tender, about 20 minutes.
- Heat the oven to 225 °C. Lay the kassler slices, slightly overlapping, in an ovenproof dish.
- Peel the pineapple, cut it into slices and remove the tough core.
- Stir the cream, chilli sauce and mustard together and pour over the meat. Lay the pineapple slices on top and sprinkle with the cheese.
- Bake in the middle of the oven until the cheese is golden and the sauce is bubbling, about 15 minutes.
- Warm the milk. Drain the potatoes and mash them with the butter, beat in the warm milk and season with salt.
- Serve the kassler with the mashed potatoes.
