Black pudding with bacon, fried apple and lingonberry jam
Sliced black pudding fried crisp in butter, with crunchy bacon, butter-fried apple wedges and lingonberry jam. Quick, cheap Swedish home cooking – some fry shredded white cabbage in the bacon fat instead of the apple.

Ingredients for 4 portions
- 600 gBlack pudding, in 1 cm slices
- 2 tbspButter, for the black pudding
- 140 gBacon
On the side
- 2Apples, in wedges
- 1 tbspButter, for the apples
- 1 ½ dlLingonberry jam
Method
- Fry the bacon in a large dry frying pan over a medium heat until crisp, 6–8 minutes. Drain on kitchen paper and keep warm.
- Core the apples and cut them into wedges. Fry them in the butter and the bacon fat for 4–5 minutes until golden and just soft. Lift out and keep warm.
- Wipe out the pan and fry the black pudding slices in the butter over a medium heat for 2–3 minutes a side until crisp on the outside. Fry in batches.
- Serve the black pudding with the bacon, fried apples and lingonberry jam.
