Chicken souvlaki with tzatziki, Greek salad and pitta bread
Greek skewers of chicken marinated in lemon, garlic and oregano, with cool tzatziki, a Greek salad with a little feta and warm pitta bread. Souvlaki is just as often made with pork fillet, and many serve potato wedges instead of bread.

- to tasteBlack pepper
- 2 dlGreek yoghurt
- 1Cucumber
On the side
- 4Tomatoes
- 1Bell pepper, green
- 1Red onion
- 3 ½ tbspBlack olives, ideally Kalamata
- 80 gFeta
- 1 tbspOlive oil, for the salad
- 4Pitta bread, ideally wholemeal
Method
- Cut the chicken into roughly 3 cm cubes. Zest the lemon and squeeze the juice of one half. Mix the zest, juice, oil, 2 crushed garlic cloves, two thirds of the oregano, salt and pepper in a bowl and turn the chicken in it.
- Leave the chicken to marinate in the fridge for 30 minutes. Soak wooden skewers in water meanwhile.
- Make the tzatziki: coarsely grate half the cucumber and squeeze out the liquid. Mix the cucumber with the yoghurt and the last crushed garlic clove and season with salt. Keep it cold.
- Make the salad: cut the tomatoes into wedges, the rest of the cucumber into half-moons, the pepper into pieces and the red onion into thin rings. Put them in a bowl with the olives, crumble over the feta, drizzle with the oil and sprinkle with the rest of the oregano.
- Thread the chicken onto the skewers. Cook them in a hot griddle pan or on the barbecue for 10–12 minutes, turning a few times, until the meat is cooked through (70 °C inside).
- Warm the pitta breads in the pan for half a minute a side and cut the rest of the lemon into wedges. Serve the skewers with the tzatziki, Greek salad, pitta and lemon.
