Fried Baltic herring with mashed potatoes and lingonberries
Butter-fried Baltic herring fillets sandwiched with dill, creamy mashed potatoes and lingonberry jam – cheap, tasty and truly Swedish.

Ingredients for 4 portions
- 800 gBaltic herring fillet, butterflied
- 3 ½ tbspDill, chopped
- to tasteSalt
- to tasteBlack pepper
- 1 ½ dlBreadcrumbs, or rye flour
- 3 tbspButter, for frying
On the side
- 1 kgPotato, floury
- 2 dlMilk, for the mash
- 2 tbspButter, for the mash
- 1 dlLingonberry jam
Method
- Peel the potatoes and halve any large ones. Put them in a pan, cover with water, add salt and bring to the boil.
- Boil the potatoes until soft, about 20 minutes.
- Rinse the herring and let it drain. Lay out half the fillets skin side down, season with salt and pepper and sprinkle with dill. Top with the remaining fillets skin side up to make little sandwiches.
- Coat the herring sandwiches in breadcrumbs, pressing them on.
- Fry the herring in butter in a frying pan over medium heat for 2–3 minutes per side, until golden. Fry in batches and keep the finished fish warm.
- Drain the potatoes and mash them with hot milk and butter. Season with salt.
- Serve the herring with the mashed potatoes and lingonberry jam.
