Fried pork belly with onion sauce and potatoes

Ingredients for 4 portions
- 400 gSalted pork belly, sliced, about 0.5 cm thick
- 3Yellow onions, thinly sliced
- 2 tbspButter
- 3 tbspPlain flour
- 5 dlMilk
- to tasteSalt
- to tasteBlack pepper, white pepper is traditional
On the side
- 1 kgPotato
- 1 dlLingonberry jam (optional)
Method
- Peel the potatoes and halve any large ones. Put them in a pan, cover with water, add salt and bring to the boil.
- Boil the potatoes until tender, about 20 minutes.
- Put the pork slices in a cold frying pan and fry over medium heat for 8–10 minutes, turning a few times, until golden and crisp. Drain on kitchen paper and keep warm. If the pork is very salty, blanch it in water for 2–3 minutes first.
- Soften the onions in the butter and a splash of the pork fat in a saucepan until lightly golden, about 8 minutes.
- Sprinkle the flour over the onions and stir. Add the milk a little at a time, stirring, and let the sauce simmer for 5 minutes. Season with salt and pepper.
- Drain the potatoes and serve the fried pork with the onion sauce, potatoes and lingonberry jam if you like.
