Method

  1. Heat the oven to 225 °C. Peel the potatoes, carrots, parsnips and beetroot and cut them into chunks or wedges of about 2 cm. Peel the red onions and cut them into wedges. Spread everything on a lined baking tray, drizzle with the oil and toss.
  2. Roast the vegetables in the middle of the oven for 15 minutes.
  3. Zest the lemon. Crush the garlic and finely chop the rosemary. Mix them with the oil and lemon zest and rub the marinade all over the pork.
  4. Heat a frying pan and brown the pork all over on a medium-high heat for about 4 minutes, until nicely coloured. Season with salt and pepper.
  5. Turn the vegetables, lay the pork in the middle of the tray and roast for about 20 minutes, until the meat reaches 65 °C inside and the vegetables are soft and golden.
  6. Finely shred the cabbage. Core the apples and cut them into thin sticks. Squeeze the lemon and toss the cabbage and apple with the juice and a pinch of salt.
  7. Stir together the quark, mustard and honey and season with salt.
  8. Take out the pork, wrap it in foil and let it rest for 5 minutes.
  9. Slice the meat and serve with the root vegetables, apple slaw and mustard quark.
