Honey and mustard pork ribs with roast potatoes
Pork ribs in a honey, mustard, lemon and garlic marinade, baked under foil until tender and then glazed until golden, with roast potatoes. They are also cooked on the barbecue or with barbecue sauce.

Ingredients for 4 portions
- 3 tbspHoney
- 2 tbspMustard
- 1Lemon, juiced
- 3 clovesGarlic, crushed
- 1 tbspRapeseed oil
- 1 tspPaprika
- 1.2 kgPork ribs, cut into pieces
- to tasteSalt
- to tasteBlack pepper
On the side
- 1 kgPotato, in wedges
- 2 tbspRapeseed oil, for the potatoes
Method
- Heat the oven to 180 °C. Mix the honey, mustard, lemon juice, garlic, oil and paprika into a marinade.
- Lay the ribs in a roasting tin, season with salt and pepper and brush with half the marinade. Cover with foil.
- Bake for 1 hour, until the meat is tender.
- Meanwhile, scrub or peel the potatoes, cut them into wedges and toss with the oil and some salt in a second roasting tin.
- Turn the oven up to 200 °C. Remove the foil, brush the ribs with the rest of the marinade and put the potatoes in the oven too.
- Bake for 35–40 minutes, turning the ribs halfway and basting them with the pan juices, until glazed and golden and the potatoes are crisp.
- Cut the ribs between the bones and serve with the potatoes.
