Lutfisk with white sauce, peas and potatoes
Oven-baked lutfisk with white sauce, green peas and boiled potatoes, with ground allspice to sprinkle over – a Swedish Christmas and Advent classic. In Skåne and Halland many stir mustard into the sauce.

Ingredients for 4 portions
- 1.2 kgLutefisk, ready-soaked
- to tasteSalt
- 3 tbspButter
- 3 tbspPlain flour
- 6 dlMilk
- to tasteBlack pepper, white pepper is traditional
On the side
- 1 kgPotato
- 400 gGreen peas, frozen
- 1 tspAllspice, ground
Method
- Heat the oven to 175 °C. Cut the fish into portions and lay them skin side down in an ovenproof dish. Sprinkle with a little salt and cover the dish tightly with foil.
- Bake the fish in the middle of the oven for 30–40 minutes, until it is white and flakes apart easily.
- Peel the potatoes, put them in a pan and cover with water. Add salt.
- Boil the potatoes until tender, about 20 minutes.
- Make the white sauce: melt the butter in a saucepan and stir in the flour. Whisk in the milk a little at a time and let the sauce simmer for 5 minutes, stirring. Season with salt and white pepper.
- Cook the peas in lightly salted water for 2–3 minutes and drain.
- Carefully pour the liquid off the fish. Serve the lutfisk with the white sauce, potatoes and peas, with ground allspice sprinkled over.
