Oven pancake with bacon
A golden Swedish oven pancake with crispy bacon, served with lingonberry jam.

Ingredients for 4 portions
- 1 tbspButter, for the tin
- 300 gBacon, 2 packs
- 3 dlPlain flour
- 3 mlSalt
- 7 dlMilk
- 4Eggs

- 2 dlLingonberry jam
Method
- Heat the oven to 225°C. Grease a roasting tin or large ovenproof dish, about 30 × 40 cm.
- Cut the bacon into pieces and fry until crisp. Drain on kitchen paper.
- Whisk the flour and salt into half the milk to make a smooth batter. Whisk in the rest of the milk and the eggs.
- Pour the batter into the tin and scatter over the bacon.
- Bake in the middle of the oven for 25–30 minutes, until set and golden brown.
- Let it cool for a few minutes, cut into squares and serve with lingonberry jam.
