Poached salmon with dill sauce, boiled potatoes and quick-pickled cucumber

Pieces of salmon simmered for a few minutes in a broth with vinegar, onion, bay leaves, peppercorns and dill, then left to cool in it so they stay juicy and firm. Serve lukewarm or cold with boiled potatoes, a soured cream and dill sauce and quick-pickled cucumber. The salmon can be made the day before.

Method

  1. Slice the onion. Put the water, vinegar, salt, peppercorns, bay leaves, onion and the dill stalks in a wide pan and bring to the boil. Keep the dill fronds for the sauce.
  2. Simmer the liquid for 5 minutes to let the flavours develop.
  3. Lower the salmon pieces into the liquid so they are covered. Keep at a bare simmer for about 8 minutes, until the salmon has just turned pale pink all the way through.
  4. Take the pan off the heat and leave the salmon to cool in the liquid for at least 30 minutes. It can also be chilled until the next day.
  5. Peel the potatoes and put them in a saucepan. Cover with water and add salt.
  6. Boil the potatoes until tender, about 20 minutes.
  7. Make the pickled cucumber: slice the cucumber thinly. Stir the vinegar, sugar and water together until the sugar has dissolved and pour it over the cucumber.
  8. Chop the dill fronds. Stir together the soured cream, dill, grated lemon zest and a squeeze of lemon juice and season with salt.
  9. Drain the potatoes. Lift the salmon out of the liquid with a slotted spoon and serve with the potatoes, dill sauce and pickled cucumber.
