- 1 cloveGarlic, for the tzatziki
- 2 ½ dlBulgur wheat
- 3Tomatoes
- 1Parsley, pot
- 2 tspOlive oil, for the salad
Method
- Soak 8 wooden skewers in water. Make the tzatziki: coarsely grate the cucumber and squeeze out the liquid, mix with the yoghurt and crush in a garlic clove. Add salt and chill.
- Mix the oil, lemon zest, the juice of half the lemon, crushed garlic, oregano, salt and pepper in a bowl. Turn the salmon and cod pieces in it.
- Leave the fish to marinate in the fridge for 15 minutes. Heat the oven to 250 °C, on the grill setting if you have one.
- Cook the bulgur according to the packet instructions, about 12 minutes, and let it cool a little.
- Cut the courgette into thick half-moons, the pepper into pieces and the red onion into wedges.
- Thread the fish and vegetables alternately onto the skewers and lay them on a lined baking tray.
- Cook the skewers near the top of the oven, or on the barbecue, for 8–10 minutes. Turn them once, until the fish is cooked through and the vegetables are coloured.
- Dice the tomatoes and chop the parsley. Mix them with the bulgur, the rest of the lemon juice and the oil. Season with salt and pepper.
- Serve the fish skewers with the bulgur salad and tzatziki.
